I hope you have taken time to enjoy the beauty of the autumn months. I too have had some time to enjoy the colors and as usual for me the fall has been a whirlwind. In September I was part of an amazing team that was combined with the American Institute of Homeopathy, Homeopathic Academy of Naturopathic Physicians, the Homeopathic Nurses Association and the Academy of Veterinary Homeopathy to put on a first of its kind conference in Phoenix Arizona. This conference was designed to lay or re-establish a foundation in good solid pure homeopathy. We had nearly 200 attendees and it was incredible. I was then back in Colorado for 30 hours before I left for Spain to represent the United States at the Liga Medicorum Homoeopathica Internationalis meeting. Here I ran hard for 12 days with a ton of amazing connections from brilliant homeopaths from around the world. I was then again home this time for 3 days before my oldest daughter and I made a 5 day trip look at universities for her. Phew! All while still working a little. It is such an honor to do so much for homeopathy.
On the non-homeopathy front I want to talk about “Apeel”. Apeel is a product that is “plant-based” that can be sprayed onto produce to extend its self-life. It was tested in a three month trial and the results can potentially change the future of produce – but is this good? The coating is made from materials found in the skins, peels, and seeds of fruits and vegetables. Its appeal to grocers is to potentially reduce food waste, plastic packaging, and the need for refrigeration. However anytime we extend something in nature there are ALWAYS potential risks. Here are some things to consider about Apeel:
- Apeel is made from edible fatty acids, but some of these may contain trans fats.
- Apeel can only be used on organic produce in the US, but not in the EU or UK.
I have high caution when it comes to spraying anything on produce to extend its shelf life. If it is extending the shelf life of a product, what is it doing to us? Do those studies exist or are we the test subject. My recommendation is to be on the lookout for produced sprayed with Apeel and avoid it if you are committed to organic produce.
A local colleague of mine is conducting research to contribute to the advancement of wearable medical devices. In particular they are testing devices to monitor blood pressure. High blood pressure is known as a silent killer. Someone can have high blood pressure, have no idea until they have a stroke. There are many things to do to decrease risk of hypertension as you have seen me write about several times. I am also very interested in accurate tracking so when my colleague came to me with this potential research project I told her I was happy to share the information with you. Often I write about the acute nature of remedies. Today I am going to talk about Graphites. It is less often a remedy used in a first aid situation however it is in the kit that many of my patients have so I thought it would be good to introduce the remedy to you.
The first thing to think of with Graphites is skin problems. These skin problems can be in the form of any herpetic eruption anywhere on the body. The scabs are thick and often itchy. Often there is a discharge that is offensive in its smell. If you or someone you know has had this you know exactly what I am talking about. These scabs can be behind the ears or in the nose. They can be on the mouth or in the genital area, regardless they are all thick and itchy and may have a sticky, stinky discharge. Also related to the skin is thickness. This can be the skin, the nails, a wart, a callous etc.
Graphites can also have some trouble with digestion. There can be a lot of gas that is worse after eating. A sensation as if a plug was lodged in the throat or as if the esophagus was filled all the way with food. With the GI problems is almost always constipation and “insufficient stools” this means that you still feel like you need to have a bowel movement even after you just went. The constipation can cause hemorrhoids or fissures that burn and hurt each stool.
Graphites is a very common remedy used during the time of menopause. The menses can be too close together, too far apart. It is often also on the lighter side. There can be hot flushes that are felt in the face and a general fatigue that is associated with this time of life, especially when doing technical work.
The last point I will make about Graphites is the insomnia. This could be during menopause or other seasons of life. It is characterized by difficulty in falling asleep, a suffocating feeling in the chest that leads to a light sleep and easy waking. When asleep there are a lot of anxious, frightful dreams. The sleep always tends to be worse at a full moon.
In homeopathy, we know the indications of a remedy based on proving symptoms, meaning a healthy person accidently or intentionally proves (over doses) on the substance. Most remedies produce many symptoms. Graphites is no exception, Graphites has produced a total of 1143 symptoms. So you can see I gave you only a few.

Tips for Going Vegetarian
There’s Vegetarian. And there’s Vegan. Related, yet different. Both diets eliminate meat, fish, and poultry. Vegans don’t eat any dairy, eggs, or other products derived from animals. Sub-types of vegetarianism, however, make exceptions for certain animal products:
- Lacto-ovo-vegetarians eat both dairy products and eggs.
- Lacto-vegetarians eat dairy products but avoid eggs.
- Ovo-vegetarians eat eggs but not dairy products.
Whatever your reason for choosing this dietary path – your health, concerns for the environment, or for spiritual reasons (or a combination of these reasons) – be aware of common mistakes that can adversely affect your health. Understanding these pitfalls can help you maintain a nutritionally sound vegan or vegetarian diet:
Consuming too much fruit sugar. Fruit is an important part of any healthy diet, but consuming too much fruit sugar on a daily basis can have a detrimental effect on blood sugar. Also, fruits alone fail to provide the diversity of nutrients a body needs to thrive. Balance fruit intake with veggies, legumes, nuts, seeds, and whole grains.
Lacking dietary variety. Being a creature of habit, or being afraid to try new foods or recipes, can leave your diet deficient in nutrients, and your taste buds in a sorry state. You’ll have food cravings, hunger pains, and might just give up on vegetarianism. Follow those famous Dr. Seuss characters’ advice: Try New Things; You Might Like Them!
Tipping the carb scale in the wrong direction. With so many convenience foods for vegetarians, it’s easy to get tricked into thinking you’re making a healthy choice by selecting “fortified with (fill in the blank)” products over fresh foods. Many of those products are loaded with hidden sugars and sodium. Get complex carbs and grains from whole, organic food sources such as barley, wheat, rye, millet, flax. Buy dried berries and nuts without added sugar or salt.
Mismanaging your protein. Folks new to vegetarianism don’t properly combine foods to provide sufficient amounts of complete protein for their age and activity level. Many people wind up relying on protein shakes, which is not the ideal way to obtain protein. Most of your protein should come from whole, real, fresh foods. A holistic health practitioner can help you establish good, flavorful meal planning strategies.
Both vegetarians and vegans need to pay attention to the intake of nutrients lost by omitting meat, fish, eggs, and dairy. As noted above, “fortified with” foods aren’t the best because the nutrients aren’t in the most bioavailable state for the body to utilize. The nutrients most commonly lacking in vegan/vegetarian diets are:
- B vitamins, particularly B12 and B6
- Calcium
- Iron, Zinc and Selenium

Roasted Sunchokes With Garlic
Simplicity can be the spice of life and this recipe offers both. Sunchokes have a delightful flavor that is enhanced in this recipe with fresh minced garlic, parsley and Olive Oil.
Roasting makes sunchokes (Jerusalem Artichokes) tender on the inside and lightly crisp on the outside. This dish is a perfect addition to any evening meal or for a tasty, healthy snack.
Ingredients:
- 1 pound sunchokes
- 2 T. olive oil
- 1 T. minced garlic
- 1 t. sea salt
- 1/2 t. fresh ground black pepper
- 2 T. fresh minced parsley
Directions:
- Preheat oven to 375 degrees.
- Scrub sunchokes with a vegetable brush. Cut tubers into 1-inch bite-sized pieces.
- In a medium-size bowl, toss sunchokes with olive oil, garlic, salt, and pepper.
- Arrange sunchokes in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, turning once, until the sunchokes are golden brown.
- Sprinkle with parsley and serve.
