Herbed Pea Fritters

PEAS help with blood sugar regulation, arthritis, osteoporosis, bronchitis, and candida. PEAS are healthy for the environment, assist in heart disease prevention, and help with constipation! They keep you strong promoting healthy bones and can reduce bad cholesterol.
There are many ways to incorporate PEAS in your diet, but here is a fun unique recipe idea to try!
Ingredients:
1 cup PEAS
2 finely chopped scallions
1/3 cup coconut flour
3 tablespoons of flax meal soaked in 7 tablespoons of water for 10 minutes
1 tablespoon of lemon juice
Pinch of sea salt
Pinch of black pepper
2 tablespoons of fresh basil chopped
1/4 cup finely chopped parsley
1 teaspoon baking powder
coconut oil for pan
Instructions:
Blend all ingredients in food processor until texture is chunky
Take 2 tablespoons for each fritter
Slightly press to flatten
Cook on medium heat in coconut oil
Cook to achieve golden hue on each side and cooked all the way through!
Let cool
