Simple Mediterranean Chickpea Salad Recipe

Mediterranean salads are often viewed as the perfect summer salad, but something this delicious shouldn’t be limited to just one season! Perfect as a side salad or light lunch, this simple chickpea salad recipe is served with a bright lemon dressing, perfect even during the colder months.

  • 2 cans chickpeas (15 ounce cans, drained and rinsed)
  • 1 diced large cucumber
  • 1 diced red bell pepper
  • 2 cups cherry tomatoes (halved)
  • 1/4 cup diced red onion
  • 4 ounces crumbled feta cheese
  • 1/4 cup finely chopped parsley
  • Lemon vinaigrette (to taste)


Toss all ingredients together in a large mixing bowl, saving the vinaigrette for last. Once the rest of the ingredients are well-mixed, pour the vinaigrette over the salad. Give it a gentle stir until everything is well combined. Enjoy!
