Comforting Butternut Squash Soup
With the cooler temps starting to come upon us we start to crave comforting and soothing dishes. After a long day of work, school, or running errands the idea of opening up the fridge and preparing a delicious dinner can seem less than appealing.
Instead of opening up the secret drawer of takeout menus, you can utilize this delicious and simple recipe to feed your soul and revitalize your energy.
Ingredients:
Butternut Squash Soup
Ingredients: 1 Butternut Squash, 1 Medium Yam or Sweet Potato, 1 onion, 4 garlic cloves, 1 inch fresh ginger (peeled), 1/2 inch fresh turmeric (peeled), 1/2 tsp chili powder, 1/8 tsp ground nutmeg, 2 cups organic veggie broth, 1/2 can coconut milk, sea salt & black pepper to taste
Directions: Chop/Dice all veggies, Place ingredients in slow cooker (minus the coconut milk), cook on high for 3-4 hours or low for 6-8 hours, Puree mixture, add in coconut milk and blend once more, cook again for 20 min on high, season to taste and serve!
